Located to the east of the Aveyron region, one of France’s biggest départements, Millau is at the crossroads of some vast, exceptional, natural regions: these include the Larzac plateau, the Gorges du Tarn, the Gorges de la Dourbie, the Gorges de la Jonte, and Les Causses et Cévennes, which was listed as a UNESCO world heritage site in June 2011. Vast limestone plateaux surround the city and provide pasture for the Lacaune sheep, allowing the manufacture of Roquefort cheese, which is composed exclusively of ewe’s milk.
A rich cultural heritage
Millau possesses a rich architectural heritage, such as the Pont-Vieux and the belfry, which can easily be spotted during a walk around the narrow streets of its city centre. In the city’s historic centre, on Place Foch, the Hotel des Pégayuerolles houses the Millau and Grands Causses Museum, where many collections retracing the history of Millau are exhibited, including: fossils, Gallo-Roman pottery, 19th century paintings and ancient gloves from glove-making workshops. It’s also a good starting point for many excursions by bicycle or on foot, with sightseeing tours to be made near both natural sites (Montpellier le vieux, Aven Armand, Dargilan and Bramabiau), and cultural sites (the Graufesenque, the Couvertoirade, the Roquefort cheese caves, Noria, Micropolis, Laguiole’s cutlery workshop, etc.).
Roquefort, an emblematic cheese of the region

We strongly recommend that you visit to Roquefort for an exciting and tasty day. Head to one of the many caves in the village. Each will tell you in its own way the history of this cheese made exclusively from Lacaune sheeps milk and matured in caves with unique properties. Unfortunately, we can’t tell you the secret recipe of Roquefort cheese as it has been a protected designation of origin since 1996. Next stop, Roquefort!
